This dish is our chef Tajima's take on "Coq au Vin Jaune," a dish he found so incredibly delicious in the Jura region of France that it "stuck to his brain," recreated using ingredients available in Japan. The umami of Shoshu chicken and the dashi flavor of maitake mushrooms are accentuated by the rich and sour notes of sherry. This recipe was inspired by the rugged mountains of the Northern Alps and the mineral-rich land of Jura.
