Based on the so-called meat miso, it is made with chili peppers, Sichuan pepper, Shaoxing wine and black vinegar to create a sauce with an authentic aroma and spiciness. In addition, it is paired with a fresh and juicy tomato sauce with a sour and sweet taste. It is a combined mapo rice dish using the "Double Entry System" in which two types of sauce made separately are packed together.
It achieves a rich flavor with a strong spiciness and sweet-sour taste that cannot be achieved by mixing the sauce together from the beginning. It also uses thick, satisfying tofu.
This menu was created with the image of Mt. Tengu, a beautiful peak in the Yatsugatake Mountains, in mind. It has a stylish, humid forest and huge rocks at the top. The warmth of a mountain hut. It's a menu that combines the two aspects of harshness and cuteness. It's a double-peaked mountain, after all.
