This green curry, simply delicious, is based on bamboo shoots and ground pork, and accented with "Nagato Yuzukichi," an aromatic citrus fruit from Yamaguchi Prefecture that resembles lime and yuzu.
We intentionally use large pieces of Nagato Yuzukichi so that the taste and texture change with each bite, designed to bring together deliciousness and enjoyment.
When I asked Chef Tajima, "Which mountain is this?" he replied,
"I've never been there, but it feels like Miyanoura-dake on Yakushima."
Later, I went to Miyanoura-dake and tasted it there. The exoticism (the dynamism of the forest zone) and sharpness (the refreshing clarity of the summit area) coexisting in the flavor were exactly right!
