Root vegetables such as onions, carrots, burdock, and potatoes are simmered in a rich potage with a large amount of shredded pork. The main ingredient, miso, is also carefully selected, using a rich, flavorful combination of miso from Kato Hyotaro Shoten, which Chef Tajima has a connection with, and dried sardine stock.
The image is of piping hot pork soup that has been simmered until it's falling apart, poured over freshly cooked rice, and then gobbled it down with a bang. By deliberately eliminating the texture, a lump of umami flows into your stomach with force. Top it off with Yawataya Isogoro's fragrant Sansho shichimi pepper... It's irresistible.
We chose Mt. Tanzawa, which is our home and close to Odawara where Kato Hyotaro Shoten is located, as our image mountain, but Chef Tajima says, "It's actually the mountain of your home."
This pork soup has a familiar Japanese taste, yet somehow it also has a new feel to it.
No matter what mountain I'm climbing, no matter how tired I am, the aroma of miso and dashi soup will relax and refresh me, help me find myself again, and set me on my feet again.
