Hachiya persimmons are grown on the north side of Mount Honaz, the highest peak in the Aegean Sea. The climate has a large temperature difference, which allows the flavor to be concentrated. They are sliced ​​and dried, creating a refreshing, not too sweet dried fruit that is different from dried persimmons.

Hachiya persimmons are originally from Japan, but were introduced to this region about 100 years ago and are now firmly established as a major industrial crop in the area.

The biggest challenge when drying persimmons without additives is blackening. In order to maintain the natural color, delicate adjustments to temperature and humidity during drying are required, making this a difficult natural dried fruit to manufacture, but they have managed to adjust it to an impressive level.
