This simply delicious green curry is based on bamboo shoots and minced pork, and is accented with Nagato Yuzukichi, a fragrant citrus fruit from Yamaguchi Prefecture that is similar to lime or yuzu.
Nagato Yuzukichi deliberately uses large yuzu so that the taste and texture changes with every bite, creating a design that is both delicious and enjoyable.

Although he has never been there, he says it reminds him of Miyanoura-dake in Yakushima.
Later, I went to Miyanouradake to try it, and the taste was truly exotic (the dynamism of the forest) and sharp (the refreshing freshness of the summit).
